elder blossom syrup
collect about 30 elder umbels — sambucus nigra is in bloom now and can easily be found in public parcs or forests.
bring 2 liters of water to boil and dissolve 2 kg of sugar. add the blossoms as well as 3 sliced lemons (preferably organic ones). leave to rest for about 2 days.
filter your potion, bring it to boil again, and add 40 grams of citric acid. bottle in sterilized glass and indulge your kids, friends and neighbors — either with lemonade (mixed about 1:5 with water), or in any dangerous alcoholic variant (e.g. with champagne or white wine). enjoy!
